How to make delicious homemade cannelloni

Meat cannelloni

Ingredients:

  • 1 leek
  • 2 green onions
  • 2 large onions or 3 small ones
  • 1 carrot
  • 1/2 red bell pepper
  • 1 celery
  • 2 tomatoes
  • 2 cloves of garlic
  • 400 g of minced meat (it can also be a lean cut cut with a knife, but they have to be cut very small!)
  • 150 gr of bacon
  • Seasonings: salt, pepper, sweet paprika, ground chili
  • Olive oil

Step by Step

  • The first step is to cut the vegetables: cut the leek and green onion finely, the onion, the bell pepper and the garlic in brunoise (very small), peel the tomatoes and remove the seeds and then cut them into small cubes, grate the carrot. Set aside and move on to the next step.
  • Cut the bacon into thin strips and place in a large frying pan or a medium pot (keep in mind that this will be where we will make all the filling so it doesn’t have to be small!) without oil or anything.
  • When the fat in the bacon begins to release, add the vegetables except the tomato and sauté. If necessary, add a splash of olive oil.
  • Once the onion is transparent, add the minced meat and cook. Season.
  • Once the meat is cooked, add the chopped tomato and cook for 5 more minutes, or until the tomato breaks down.
  • Ready! Once everything is cooked, add the paprika and ground chili and adjust the flavors.
  • Fill the cannelloni normally.

A very good option for this meat cannelloni filling is: When the vegetables are cooked and before adding the meat, add a tablespoon of flour, stir and cook for 3 minutes. Follow the steps according to the recipe and when we add the tomato we add a splash of milk. Finish cooking normally and that’s it!

Vegetable cannelloni

Ingredients

  • 600g fresh spinach
  • 2 large or 4 small red onions
  • 1 clove garlic
  • 3 hard boiled eggs
  • A handful of pine nuts or chopped toasted almonds
  • 100 g grated parmesan cheese
  • Salt and pepper
  • Olive oil

Step by Step

  • Carefully wash the spinach and dry it well.
  • Cut the onion and garlic very small and sauté in a pot with a splash of olive oil. When they are transparent, add the spinach and sauté for a couple of minutes. Until the spinach is “fainted.”
  • Remove from heat and season with salt and pepper. Once it is warm, add the chopped boiled eggs, grated Parmesan cheese and nuts. Ready!

You can make chard or spinach and ricotta cannelloni adding 200 g of ricotta and using 300 g less spinach. You add it when you add the cheese and that’s it!

Chicken cannelloni

Ingredients

  • 3 thigh legs or 2 chicken breasts
  • 1 large white onion
  • 1 green onion
  • 100 ml white wine
  • 1 clove garlic
  • Seasonings: salt, pepper, curry powder.
  • Olive oil

Step by Step

  • Brown the chicken pieces on both sides. If using thigh leg, brown the fat side first. Add the onion and garlic and sauté until the vegetables are translucent.
  • Add the seasonings and cook for 5 minutes. Add the wine and cover until the chicken is cooked. If necessary add a splash of water.
  • Once cooked, process everything (obviously remove the bone first). Taste the filling and rectify.

Ingredients

  • 80 gr of butter
  • 2 medium onions
  • 4 cans of sweet corn
  • 4 tablespoons of flour
  • 300 ml of milk
  • Salt
  • Pepper
  • Grated Parmesan cheese

Step by Step

  • Chop the onions as finely as possible.
  • Add the butter to a pan and when it melts add the chopped onion. To Salt. When it is transparent, add the drained cans of corn.
  • Mix everything well until it is well integrated. Once it is done, add the tablespoons of flour and stir for a few minutes. Add the milk little by little.
