How to make carbonara sauce for all your pasta

Ingredients

for 2 generous servings

2 eggs

2 yolks

200g. dry pasta

60g. grated cheese

salt and pepper

150g. bacon

Step by Step

  • Boil the water. Meanwhile, cut the skin of the bacon and set aside. Cut the bacon into strips.
  • Beat the eggs and yolks well with salt and pepper. Add the cheese and mix well.
  • Add coarse salt to the water and add the noodles.
  • In another pan, brown the bacon with the skin included, this is what gives it a lot of flavor! Take a little of the cooking water from the pasta and add it to the egg and cheese mixture, beat well.
  • When the bacon is golden, remove the skin and turn off the heat. In the same pan with the heat off, add the drained al dente noodles and the egg mixture and stir.
