Rice with chicken, a delicious and economical recipe


What do we need?

for 3 servings

  • 1 onion
  • 1/2 bell pepper
  • 1 clove garlic
  • 1 chicken breast
  • 1 tomato
  • 1 cup of rice
  • 1 poultry or vegetable broth (see)
  • 1 splash of balsamic vinegar (can be replaced with white wine)
  • rice seasoning
  • Salt, pepper and oil
  • Chopped chives (to decorate)

Step by Step

1. Chop the chicken into small pieces and sauté it in the hot pan (with a splash of oil) until golden brown on both sides. Remove and reserve.

2. Sauté the chicken in the cooking stock. onionhe morron and the garlicall chopped small.

3. When the onion is transparent, add the tomato, also chopped. Sauté until it turns brownish in color.

4. Add the chicken pieces that we had reserved. Add the rice and stir, sautéing over medium heat, until the rice grains look transparent.

5. Add double water (2 cups), salt and pepper and season. Also add the jet of Aceto or wine. Stir only once and let it boil. When it boils, lower the heat to medium and cook, uncovered, until the rice has consumed all the water. Do not stir during cooking.

6. Serve and rain with chives chopped. Can be eaten with lemon.

Bonus track: homemade bread to accompany chicken rice

What do we need?

  • 2 teaspoons baking powder
  • 2 eggs at room temperature
  • 12 tablespoons of powdered milk
  • Sesame seeds, optional

Step by Step

First we are going to beat the eggs at room temperature (if they were in the refrigerator, take them out a while beforehand so that they reach their natural temperature) with the baking powder until it is completely dissolved and a homogeneous mixture remains.

Add the tablespoons of powdered milk to the mixture little by little, mixing well until incorporated.

Make small bread rolls with a spoon and place them on a baking sheet previously moistened with oil or flour. Optional, add sesame seeds on top to decorate and give it a special taste. We recommend leaving space between the tablespoons because the bread approximately doubles in size. Keep in a medium oven for ten or twenty minutes, or until golden.

A tip: They can be enjoyed with butter, jam, or whatever we like the most!
