How to make the real alfajor santafesino


What do we need?

-250G. flour 0000

-4 yolks

-50g. butter

-1 tbsp. alcohol

-1 pinch salt

-75g. water

-caramel sauce

For coverage

-1 clear

-250g. powdered sugar

-1 squeeze of lemon

Step by Step

1-The first thing we are going to do is put the flour in a bowl and then we are going to add the yolks. We are going to save one of the whites to make the glaze and with the leftover whites you can make this one. We add the pomade butter and then a tablespoon of alcohol that will add a crunchy texture to the tapas. Finally we are going to add the salt and warm water.

2- We are going to mix all the ingredients until they come together, forming a dough that we are going to remove from the bowl and take it to the counter to knead for 10 minutes. It doesn’t matter that the dough already looks homogeneous and smooth, try to continue kneading for the entire required time. This will make the caps look much better.

3- After 10 minutes, we are going to place the dough in a bowl, cover it with plastic wrap and let it rest in the refrigerator for 30 minutes.

4- Once that time is up, we are going to remove it from the refrigerator and place it on the counter with flour underneath and on top, and with the rolling pin (also floured) we are going to roll out our bun. It has to be super super fine.

5- When we have the dough well stretched, we are going to proceed to cut. We can do it with a cutter or also with a glass that has the size we want. We are going to fold the rest of the dough like a handkerchief and stretch it again to continue cutting tapas. Like this, until there is no more dough left.

6- We place the caps on a platter and prick them with a fork so that they do not inflate with the heat.

7- We put them in the oven at 180º for approximately 7 minutes.

8- When we see them cooked, we take them out of the oven and let them cool.

9- What remains is to assemble the alfajores: We take 3 tapas and place the dulce de leche pastry making a 3-tier alfajor (tapita, dulce, tapata, dulce, tapa) and that’s it!

Glazed

1- We are going to take the egg white that we reserved and we are going to place about 3 tablespoons of powdered sugar in that same bowl. We are going to mix and microwave for 10 seconds.

2- When we take it out, we mix again and put it back in the microwave for another 10 seconds.

3- When we leave the microwave for the second time, we are going to mix and then add all the rest of the powdered sugar.

4- Add a few splashes of lemon juice and mix well. And our glaze is ready!

5- With a spoon we are going to place it on top of our alfajores. Don’t worry if you have an irregular dip because that’s how these alfajores should turn out.
