How to make apple crumble without sugar!

  • 6 apples
  • Juice of 1 lemon
  • 2 sachets of stevia powder
  • 1/2 cup of almonds
  • 1 cup whole wheat flour
  • 1 cup instant oatmeal
  • 2 tbsp. flax seeds
  • 6 tbsp olive oil
  • 1 tsp. cinnamon

First of all, I tell you that crumble is usually made with green apples. Since I am making a sugar-free crumble I thought that the red apples could add more sweet flavor, and the truth is that it turned out great. In any case, if you want to use green apples, you can do so without any worries.

  • lThe first thing we are going to do in this crumble recipe is peel the apples. You can use a potato peeler or a knife, whichever is easiest for you. Then we cut them in half and remove the center with the seeds. Finally we cut it into thin slices, as if they were cutting julienne style.
  • In a baking dish we are going to arrange the apple slices a little on top of each other. To better understand this step I recommend that you watch the video, it is super easy but difficult to explain in words. Remember that you must use a mold of the appropriate size according to the size of the apple crumble you are preparing. In my case I am making a small one, so if you want one of a more traditional size you can double the ingredients and use a larger pan.
  • Once we have all the apple slices arranged in the source we are going to sprinkle with the juice of half a lemon to prevent them from oxidizing and we reserve them.
  • Now we are going to make the crumble. The first thing we are going to do is crush the almonds. To do this I did not remove them from the bag and with a rolling pin I crushed them until they were crushed. Another way can be by chopping them with a knife or using a mortar, the important thing is that they remain in small pieces.
  • Place the whole wheat flour in a container along with the oats and almonds. We add a pinch of salt and the stevia powder: I used two sachets of stevia but this depends on how sweet you want this apple crumble to be. If you want it very sweet you can use three, and if you want to use only one that is fine too.
  • Add to the previous mixture a teaspoon of cinnamon and two tablespoons of flax seeds, which will make the crumble very crunchy.
  • Now we are going to add olive oil. Apple crumble is usually made with butter, I know, but this recipe uses olive oil and is delicious. You can start mixing with a spoon but in the end I recommend using your hands. You will see that this crumble is a little disassembled, if you wanted it more armed you can change the proportions and use more flour than oats. I really like how it looks like this, more grainy.
  • Place the crumble on top of the apples with an important fact: you don’t have to crush it. Make sure the crumble covers the entire surface of the apples.
  • Bake in the oven at 180º for 40 minutes. Once this time has passed, you have to check how it is: it should be crispy on top but the apples should also be very tender (you can peek or prick with a knife). If it happens that the crumble is very golden but the apples are not yet cooked, you can cover the dish with aluminum foil so that the crumble does not continue to brown and place in the oven for a few more minutes so that the apples finish cooking.
